It’s Fridayyyy Lovelies!
It is almost spring time and that means almost SUMMER!! I am so excited to be living in California this summer! Beach days all the time! I want to make sure I am beach ready and that means changing my diet up. I have lost a lot of weight in the past couple of months since my move all positive progress. I have started to change how I eat and started working out regularly and am trying to live a healthier lifestyle. I plan to be in the best shape I have been in my life so far, I can’t wait to share my fitness journey with you. I will be making a lot healthier recipes to be sharing and also some yummy desert alternatives since I have such a sweet tooth. Today I am going to share this yummy light and protein packed “Shrimp Salad.” I had my girlfriend Ashley over and we made the salad and had a glass of wine… or two… We are working it off in Spin class in the morning, it’s okay! The salad takes maybe 15 minutes all together to prep and make. I sautéed the shrimp in a pan, but grilling it would also be really good as well! The dressing I created just based off of the flavors I used to sauté the shrimp. It all turned out so yummy and we had salad left over for the next day. I was happy to enjoy it again for lunch the following day. I have been drinking a lot of probiotic drinks lately to help my immune system stay strong, I paired this salad with one of my favorites for lunch. I haven’t been sick in over a year and Want to keep it that way. Eating clean will definitely help keep me healthy and fit! I really hope you lovelies like this salad. Ingredients:
Serves 4
1 lb shrimp pealed
4 garlic cloves, minced
1 tablespoon olive oil
1 tbl butter
Saute shrimp in butter & olive oil and had garlic S&P for 3 minutes each side and then set aside.
2 romaine hearts
1 cup Arugula
1/4 cup Feta cheese
1 red onion diced (You can use half if you’re not a huge fan on onion)
1 avocado small or half of a large, Diced
Ingredients Dressing:
2 tbls olive oil
3 tbls apple cider vinegar
1 garlic clove, minced
1 lemon, juiced
tsp S&P
Blend all ingredients together or shake, and add more or less of each ingredient till you get desired taste.
Mix in shrimp with salad and toss dressing and ENJOY!!
