Fruity Chicken salad

Hello Lovelies!

I hope everyone is having a good week! It was national Women's day this week, a lovely day to celebrate women all around the world. I attended a lovely church event for Women and it is well with my soul. I loved seeing all the encouraging pictures and quotes throughout social media this week. Besides that I have been sticking to working out at eating right. It’s a daily struggle, but once it becomes habit it won’t be. I made this yummy chicken salad for lunch the other day I wanted to share the recipe with you. The only really bad part is the mayo and it’s only 2 tbls so not too much. I was inspired to make the recipe after a place in Las Vegas called “Rachel’s Kitchen” they are known for serving healthy food and drinks. Their chicken salad was one of my favorite dishes they served with ingredients of grapes, apples, celery and shallots. I used red onion instead of shallots and marinated my chicken according to my taste so it came out a little different, but still tasty.  I used Ezekiel bread as well which is a healthier bread option. I don’t really taste a difference and their cinnamon raisin is a yummy treat every now and then! You can always change the recipe a little to match your own taste and I made enough for 4 serving so if you need more adjust accordingly. All together this recipe takes less than 10 minutes after your chicken is already cooked. If you want, you can buy a rotisserie chicken and that works just as well for even less time! You can also sub the fruit out of you think it will be to sweet or change the grapes for cranberries or add nuts to it. I think almonds and grapes would be a good combo that I’ll have to try that next. I will see you Tuesday  for a bar/restaurant feature in Montrose, Glendale. It’s all about their happy hour! Not going to lie not the healthiest, but portions are perfect and moderation is key.  Splurge days are encouraged in my book.  Hope you have a good weekend and let’s make it an active one for the splurges to come Tuesday!

Ingredients: 
Serves 4

2 chicken breast shredded ( bake in olive oil and lemon for a fresh light taste)
2 tbls Mayonnaise (I like the olive oil kind)  

1/2 cup red grapes

1/2 green apple diced

1/4 red onion diced

2 celery sticks chopped

1 tsp s&p

1/3 cup Shredded Parmesan cheese or any cheese you like Feta would be yummy as well! 

Mix all ingredients in bowl and serve cold on bread or over lettuce if you really wanna keep it light.
