Sausage, Kale, Potato Soup

Happy Hump day Lovelies!

I am finally sharing one of my favorite soups I eat all year, but love even more to warm me up. I had my bath and body work candle burning my favorite fall scent while cooking to really make my my home feel cozy.  It is the perfect fall and winter soup that keeps you feeling warm inside without any overindulgence of calories.  I get full off this soup and even use it as a pre workout meal, it keeps me going without feeling bloated.  The one great thing I love about soup is once all the ingredients are all inside you just let it simmer and stir occasionally it’s lazy proof! I got the recipe from dietproof.com and changed a little bit of things that I will share with you the changes I made.  This soup has does not that many ingredients, but has a lot of flavor and you can always add more items to the soup to add more flavor to.  This recipe takes about 30 minutes total to make the soup so start getting your grocery store list ready I have dinner and lunch tomorrow covered for you.  I hope you enjoy the soup lovelies leave a comment if you have any questions or want to share how it turned out!

Melinda & Ryan

I am very excited to share with you some photos from the two previous engagements I got to be a part of, by my two lovely friends Melinda & KelseyI love doing engagement shoots it’s always so much fun and the couples are so happy and excited. Kelsey & Mike

Ingredients:

  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, finely chopped
  • 1 package (14-ounces) smoked sausage (such as kielbasa - I used smoked Turkey sausage, sliced into 1/4-inch rounds
  • 4 cups torn kale leaves
  • salt and fresh ground pepper, to taste
  • 1 sprig fresh rosemary
  • 1/2 teaspoon dried thyme
  • 3 cups cubed potatoes
  • 1 carton (32-ounces) low-sodium fat-free chicken broth
  • 2 cups soy milk (I used almond, but half and half or reg milk works)

Directions:

  1. Melt butter and heat olive oil in a large soup pot over medium-high heat.
  2. Add diced onions, garlic, sliced smoked sausage rounds, kale, salt, pepper, rosemary and thyme; stir to combine and cook for 8 minutes, stirring occasionally.
  3. Stir in potatoes.
  4. Add chicken broth and soy milk; bring to a boil.
  5. Reduce to a simmer and continue to cook for 10 to 12 minutes, or until potatoes are fully cooked and tender.
  6. Remove from heat.
  7. Taste for seasonings and adjust accordingly.
  8. Remove rosemary sprig.
  9. Ladle soup into bowls and serve.
