Hello Lovelies!
My favorite season is right around the corner, FALL! I am so excited for the leaves to change, cooler weather, and pumpkin everything! I will be posting recipes of a ton of my favorite fall treats for the next two months. I can’t wait to share them with you. Today is the first fall recipe even though I make this year round because it’s just so delicious. Today’s recipe is my homemade chili! My chili is turkey based just because I try to not eat red meat more than once a week and there is always leftovers for the next day, which I look forward to every time. The one thing I love the most about this recipe is how easy and quickly it is to make. It takes no more than 30 minutes to make this dish, which is great for a busy fall day. One thing I do is always change up ingredients depending on the season. If it’s summer time, I want a lighter chili with more veggies added to it. In the fall and winter I want it nice and hardy with rich cheeses to top it off. One of my absolute favorite toppings on my chili is blue cheese. It is one of my favorite cheeses and brings a different texture to the dish that you wouldn’t normally think of adding. For this recipe I am sharing today I used shredded cheddar. I love my chili spicy so I added a whole jalapeno and added Cayenne pepper to make it the perfect amount of spice. I have learned not to make it too spicy if I am sharing it with company and not just my boyfriend who shares an intense love for spice like I do. I added mini sweet peppers to this recipe to sweeten it up and to add beautiful color to the dish. If you don’t have sweet peppers on hand, corn, carrots, and many other vegetables can always be added in or swapped for that sweet fix. I also made cornbread to pair with the chili and some honey butter to spread on top. I didn’t make the cornbread from scratch, instead I bought a store box and just made the butter from a stick I had at home. The combination together is just heavenly. There has been a lovely music festival in Las Vegas every year for the past 4 years called Life is Beautiful. It’s a three day festival taken place in downtown Las Vegas also known as Freemont Street and I look forward to it every year. They have such yummy food as well as great performances and fun art to view all around. I will be sharing with you both Monday and Wednesday some of my favorite food that will be appearing at the festival so make sure to stop by and check it out. Monday after the festival I will share with you my experience from the festival with tons of pictures so you can feel like you went with me. I can’t wait mainly because one of my favorite bands is performing, The Luminaires. I have never seen them live and I’m so stoked!! Turkey Chili ingredients:
Serves 6 bowls
· 1 package ground turkey
· 1 onion white or yellow
· 1 tsp olive oil
· 2 cloves garlic
· 1/4 tsp Cayenne pepper
· salt and pepper to taste
· 1lb can diced tomatoes
· 1 can black beans
· 1 can kidney beans
· 1 jalapeno diced
· 1 cup diced sweet peppers
Cooking directions:
In a large pot add olive oil and dice onion and garlic then saute in pan until browned. Add in ground turkey season salt and pepper about a pinch of each and cook for 15 min until lightly browned.Strain everything and place back in pot, then add in diced tomatoes, canned beans, peppers and jalapeno. Stir on med until fully combined add cayenne while mixing, let simmer on med-low for 15 min while stirring every 5 min. Fill bowls with desired amount and top with cheese of choice and enjoy!
Honey butter:
In a small pan add one stick of butter until melted and then add 1 tbl of honey. Pour in air tight container and place in fridge for 4 hours or more until solid. Spread on cornbread and enjoy!
