It is the first Wednesday of the month so that means cupcake recipe! YAY! I am so excited to share with you a rich, nutty sweet cupcake. I love, love, love chocolate and almonds are my favorite nut so I thought why not combine the two? I know Hershey's had the right idea by adding almonds to their chocolate,becoming my favorite candy bar! The dark chocolate kind of course...So I made a rich dark chocolate cupcake and topped it off with a vanilla almond cream frosting. I know, sounds amazing- it is! I said I love chocolate so I used unsweetened dark cocoa, but it makes the cake really rich so regular cocoa works just as great your preference lovelies. Unless you are a chocolate lover like me...go for the dark richness you won’t regret it! The frosting gives it a nice sweet and nutty taste, really balances well with the chocolate. I also added chopped almonds on top to add some crunch, and it makes a lovely garnish which makes decorating that much easier. I paired my cupcake with a nice cold glass of almond milk which really brought it all together. The weather outside is cooling down and these are a nice way of celebrating fall coming. Chocolate cupcakes ingredients:
· 24 cupcake liners
· 1 cup of flour
· 1/2 cup unsweetened dark or reg cocoa
· 1/2 tsp baking powder
· 1/2 tsp baking soda
· 1/4 tsp salt
· 1/2 cup butter
· 1 cup sugar
· 1 tsp vanilla
· 1 egg
· 2/4 cup milk
Baking:
Mix flour, cocoa powder, soda, and salt. In a separate bowl cream butter and sugar on medium with a electric mixer until light and fluffy. Reduce speed to low and add vanilla and the egg. Add milk and flour mixture in alternately while still mixing. Bake for 20 min or until toothpick comes out clean.
Frosting ingredients:
· 1/4 tsp Almond extract
· 4 cups Powdered sugar
· 1/8 tsp Salt
· 1 tsp Vanilla extract
· 1 cup Butter, unsalted
· 1/4 cup Heavy whipping cream
· 10-20 almonds chopped for garnish
Making the Frosting :
In the bowl of a stand mixer fitted with a paddle attachment, or in a large bowl with a hand-held mixer, mix all of the ingredients on low speed until it starts to come together. Increase speed to high and beat for 3-4 minutes until frosting is fluffy, pausing once or twice to scrape the bowl down. Don't want any ingredients left behind!. Frost decorate and enjoy!
