This week is one of the best holidays all year, Thanksgiving! Food on food and family; I couldn’t be more excited I am going to California and spending the holiday with my cousins in LA. I can’t wait to bring this side dish I am sharing with you today to the table which is a healthier side option for thanksgiving. I never really thought about how many calories you really consume on Thanksgiving until I started watching what I eat, and last year was the start of me bringing healthier alternatives to the table for myself and others who don’t want to over indulge. I love food, and yams with marshmallows are my favorite dish this holiday. I don’t want to feel so guilty after such a nice balance on my plate is what I am going for this year. I found this recipe on Pinterest just looking through holiday recipes, it caught my eye with the bright red and orange colors. It is a beautiful dish to showcase on your dinner table and tastes even better.
The best part of this recipe is it only takes 40 minutes and is really simple to make. I want to play with the toppings a little more before making it for Thanksgiving. I used butternut squash, cranberries, feta cheese, honey and salt and pepper. It is great with that, but I would want to try to add pecans and maybe switch the cheese to goat cheese. I feel like the possibilities are endless with this dish. I hope you enjoy it and the people you’re with do too. Ingredients
- 1 large butternut squash, peeled + chopped I bought the pre packaged saves time!
- a hearty drizzle of olive oil [approx 1-2 TBSP]
- salt, pepper, and garlic powder, to taste
- 1 1/2 to 2 cups fresh cranberries
- 2-3 TBSP honey [or extra, to taste]
- 1/4 cup finely crumbled feta
- ground cinnamon, to taste about 1/4 tsp
- salt and pepper 1 tsp
- fresh or dried parsley, to garnish [optional]
Instructions
- Pre-heat oven to 400 degrees F.
- Lightly drizzle or spritz a baking sheet with olive oil.
- Add cubed squash to the sheet along with another drizzle of olive oil.
- Sprinkle with a with salt and pepper and Cinnamon
- bake for 25 min
- add honey, cheese and cranberries and bake another 10-15 min until cranberries burst and soften.
- garnish with parsley and serve! Enjoy Lovelies!!
