Today I am going to share with you one of my absolute favorite cupcake recipes. My love of baking began when I was a little girl, baking cakes with box cake mixes. As I got older my interest turned to cakes made from scratch, but mostly Cupcakes made from scratch. There’s just something about a cute mini cake that we all love so much! My most favorite part of making cupcakes is making the frosting and decorating them! Frosting is my favorite part on any cupcake! The first time I made these cupcakes they were a gift for my boyfriend for Valentine’s Day. He loves strawberries and can’t resist a cupcake it was the perfect combination. I made 8 for my boyfriend and gave 24 away to my friends and family. The recipe makes 32 cupcakes so I can share with everyone and I love that!! This is by far my favorite cupcake recipe for summer. They are just so light, fluffy and moist and after I frost them I put them in the fridge till they are ready to be served (at least 30 minutes) and it takes them to a whole new level. They are the perfect treat to cool down from the summer heat and I love pairing them with a fresh glass of lemonade or a sparkling water with a lemon squeeze. No matter what occasion you make them for or what you decide to serve to accompany them, I know this is one recipe you are going to fall in love with as much as I have. Strawberry Cupcakes
32 Cupcakes
What you will need:
32 Cupcake liners
Preheat oven to 350 degrees
2 ½ cups cake flour
1tsp baking soda
½ tsp salt
½ cup unsalted butter
1 ½ cup sugar
2 eggs
1/3 cup buttermilk
¼ cup oil
1tsp vanilla extract
2 cups diced strawberries (About a whole carton) buy 2 in the store more for frosting!
Strawberry cream cheese frosting
½ cup strawberries
8oz cream cheese at room temperature
1 ½ sticks unsalted butter at room temperature
1 ¾ cups powdered sugar
Baking:
Sift flour, salt and baking soda into a medium bowl. Set aside. In another bowl cream butter and sugar with an electric mixer until light & fluffy. Add eggs one at a time then beat in the buttermilk, oil and vanilla. Start adding the dry ingredients until fully combined, start adding diced strawberries. Fill the cupcake liners with batter leaving about ½ inch space from the top. . Bake for about 20 mins. Until golden and a toothpick inserted in the center comes out clean. Cool completely until frosting.
Frosting:
Now the best part! The frosting! Puree strawberries in a food processor and strain through a mesh sleeve to remove seeds, Set aside. Beat the cream cheese and butter with an electric mixer until smooth and fluffy, about 5 minutes. Add powdered sugar and mix until smooth. Mix in lemon juice, vanilla and strawberry puree. You can adjust the sugar and strawberries until desired taste. Remove cupcakes from pan after cooled, frost cupcakes as desired. Then place in fridge until ready to serve. Enjoy!
