Hello Lovelies!
So today I am sharing with you some brunch favorites that you can make at home and enjoy any day of the week. After my launch brunch at Echo & Rig I felt inspired to create my own brunch at home. This previous Sunday I created this lovey brunch. I had my lovely friend Melinda join me and we made berry pancakes with a maple cream cheese topping, and a sausage kale scramble. How could we not include a cocktail we made sangria with a, Chardonnay, some fresh fruit and a little Limon cello. Everything turned out so great! I got the pancake recipe from a lovely food blog called “Little Spice jar”. The recipe makes wheat pancakes, but these are just as fluffy and light as regular pancakes just slightly-healthier-and made from scratch makes such a difference. I just added strawberries and blueberries to it and created a fun topping to go with it. You can add anything you would like to this recipe and it would turn out fantastic! I want to try chocolate chip & peanut butter next! (Don’t worry I will post about it when I do) As for the scramble, this was so easy and filled with tons of flavor and not a whole lot of ingredients. I used a Cajun style andouille smoked sausage for the scramble. That has so much flavor you don’t need to add much else but what you want in the scramble and of course salt and pepper. You can sub anything out for something different just stick with the basics and it will all come together to be everything you love. The great thing about this whole brunch it only took about an hour with the prepping and cooking and decorating, not too bad for a brunch that can feed up to 4 people. I recommend making the sangria before cooking or even the night before, it needs to sit for at least an hour prior to serving. Maple cream cheese topping
1/2 cup whipped cream cheese
2 tbl maple syrup
Mix until combined and set aside until pancakes are ready to be served.
Add to pancakes and top with fresh fruit once ready to eat.
Scramble:
Feeds up to 4 lovely people
One package of Cajun style andouille smoked sausage (or any flavor of choice)
1 tomato diced
1 cup frozen kale
5 eggs
2 yellow potatoes diced
1 tbl oil
Salt and pepper for taste
1/3 cup Colby jack cheese
Cooking:
In a large skillet add oil and diced potatoes with a pinch of salt & pepper, cook until tender with fork about 10-15 minutes. In a separate bowl crack eggs and whisk together until yolks and whites are combined add a pinch of salt & pepper set aside. In the skillet add sausage and cook until edges are brown add in kale, tomatoes cook until kale is warm through. Add eggs once everything is cooked through mix until eggs are desired texture. Top off with Colby jack cheese and enjoy!
White Sangria:
1 btl Chardonnay or white of choice
1 peach sliced
½ cup sliced strawberries
¼ cup blueberries
1 ounce Limon cello
In a large pitcher add in all ingredients and let sit in fridge for at least an hour prior to serving. Once ready pour in wine glasses include some fruit and enjoy! The longer it sits the more the fruit is absorbed and the more flavorful it will become. You can also add a soda or sparkling wine or champagne to add some bubbles. This is just a quick easy sangria I created just for this brunch. Feel free to change it up to what you like and add in different fruits and wines the possibilities are endless lovelies.
