Aunt Di's Salmon

Welcome back Lovelies!

I know I have been MIA, but this past semester took up all of my free time! I can finally see the light at the end of the tunnel, one more semester and it’s all over! I got this! I have been sticking with eating healthy during all of this with my occasional tequila drinks here and there. I can’t help it I love tequila and one day I will share some of my favorite tequilas and margaritas with you, but that’s for another day. Today I am sharing with you my aunt's salmon recipe - it has three simple ingredients and tastes so amazing! It’s the perfect dinner after a long day or week and takes about 15 minutes to make! The best part is you can have it all week long if you want, it makes enough to feed up to 6-8 people! I like making salads with the leftovers and even getting a little creative with breakfast in the morning. (Eggs Benedict topped with salmon anyone?!) I think one of the big factors of taste is where the fish is from and I personally like the salmon at Costco. That’s where my aunt Di gets hers and it’s the best price and freshest taste I have had without being ocean side. Costco is also amazing in every way, I think it’s my favorite store… They also have good Kirkland tequila, Reposado is my favorite and you can get a 1 liter bottle for $15!

 

 

Anyway I will save the tequila talk for another day, but had to let you know about that secret gem.  If you don’t have a Costco card, I found Whole Foods to have good quality fish or even Trader Joes.  The seasoning is also a key factor in the flavor of course, but you only need a seafood seasoning.  My Aunt had a seafood seasoning from her trip to Alaska we used.  You can use any kind - they are all pretty similar and Lawry's sesame ginger marinade.  I paired the salmon with a salad and also a cauliflower/sweet potato rice. Any veggie side dish would also go really well! I paired it with garlic green beans before and the flavors complimented each other very nicely.   I hope you enjoy the recipe as much as my family and I do! Ingredients:

1 lbs salmon or more ( I got mine from Costco 1 1/2 lbs) 

Lawry's sesame ginger marinade 

Seafood or salmon seasoning any kind work (Your preference) 

Directions:

Line a baking sheet with foil and place salmon on top of foil after giving it a quick rinse. 

Take about 2 tbls of marinade and spread with a brush a thin layer of marinade on top of salmon, not a lot. (More is not better!) 

Sprinkle seafood seasoning on top covering the whole fish lightly. 

Place salmon in broiler for 10 minutes or until fish looks caramelized, adjust time on taste preference. I don't like my fish well done so 10 minutes is perfect. Then take out and top it on a salad or pair with a veggie side dish and enjoy!
