1 Year Anniversary Fiesta!

Lovelies!

It is my one-year anniversary!! I can’t believe it’s already been a year, how time fly’s when you’re having fun! I just want to start off by thanking everyone who reads my blog and has supported me along this journey. I am so blessed to have such a great support from all of you and my lovely family & friends! I have had a crazy past year with moving and my career freelancing. It’s been such a fun adventure and I’m so excited to see where this journey takes me. This road hasn’t only been great it’s had its bad times and struggles to it as well. Following your dreams is not always so easy, but not trying isn’t any better.  I hope to have more to offer this next year around for all my lovely readers. More travel spots and more posts weekly! I am working hard to keep lovelybites your weekly readers digest!

To celebrate my one-year anniversary I decided to have a fiesta! With my anniversary being August 1st and it following on a Tuesday it was only necessary I made it taco Tuesday! I had my good family friend Lupe help me with the cooking she makes the best salsa! (One day it’s going to be famous! ) I will be sharing all the food we made and recipes to the salsa, guacamole, and pineapple jalapeno margarita! We had shredded chicken and ground turkey for the tacos. I used organic taco mix from Sprouts for the ground turkey and boiled the chicken in water with s&p hours prior to serving.  Lupe also assisted me with black and pinto beans made from scratch. She also made some Mexican rice for an extra side.  We used corn tortillas and had lettuce, tomatoes, onions and jack and white cheddar cheese  for toppings. I had some of my family over for the celebration and my lovely friend Christina was visiting from Vegas so she came as well! It was such a lovely time.  I am so happy with how all the food and margaritas came out! Everything was so yummy and it was the perfect celebration for my one-year anniversary!  Having a blog has been so much fun and I hope to continue this food journey for years to come and I would love it if all you lovelies stayed along for the adventure. I can’t express enough how happy it makes me to hear some of you trying my recipes and recommendations. My promise to you is that I will always be honest and upfront about the places I talk about and food I share. Thank you again for making lovelybites what it is today. To more years to come! Guacamole : 

6 Avocados 

2 1/2 tomatoes chopped 

Half Jalapeno or more depending on spice level 

1/4 cup cilantro chopped 

1tbl garlic powder salt & pepper 

1 lime squeezed 

Mash Avocados and add in all ingredients and serve immediately! 

Salsa : 

8 tomatoes 

4 Jalapenos  ( If you want it spicy add 2 habaneros) 

2 cloves garlic 

1/3 onion 

1 tsp salt or more for taste 

Roast tomatoes in a pan until softened. Blend onion, garlic, salt. Then add peppers and tomatoes blend on Medium for a thicker salsa or high for a smoother texture

Jalapeno pineapple Margarita : 

12oz cup measurement triple for a pitcher! 

1 1/2 shots of silver tequila of choice. (I like Milagro, casadorez & Tres Agave) 

1/3 Jalapeno sliced 

1 tsp agave 

1 cup pineapple juice 

half lime squeezed 

about 2 tbls Tajin for rim. Place on a plate and rim the top of your glass with a lime and dip and add ice.  

Add tequila, Jalapenos and agave in a shaker and muddle until Jalapenos are  broken up. Add pineapple juice, lime and ice, then shake and pour over ice in a 12 oz glass. Enjoy! 

Garnish with Jalapeno slice if desired!
