Hello Lovelies!
I haven’t made anything sweet in a while and my friend suggested this recipe that her friend Carrie shared with her! It’s a lighter cake with a fruit topping so not a whole lot of calories for a slice or two… The recipe is pretty simple to follow and the cake takes about an hour to bake, but no frosting for this one a little powdered sugar, homemade whipped cream and fresh fruit to top it off. I had help with my friend Jenean making this delicious treat for dessert one night. She made the whipped cream and helped me style the food. She is like my older sister and we go hiking together all the time so she made sure I only had about two slices total of cake so I wouldn’t feel guilty about the splurges. If you have a nut allergy or hate almonds, then sorry this cake isn’t for you… I hope you don’t have any of those issues and you can make and enjoy this cake with people you love! The texture of this cake is similar to an angel food cake so it’s nice and light and fluffy. Along with the whipped cream it’s like a little taste of heaven on your lips.
I really enjoyed this cake and will definitely be making it again in the future! Everyone I shared it with also enjoyed it and it didn’t last very long between everyone taking some and wanting to bring some for their other loved ones to try! Directions:
1¼ cup sugar
7 ounces almond paste
10 oz. soft unsalted butter
6 eggs
1 teaspoon of vanilla extract
1 cup flour
¼ teaspoon salt
1½ teaspoons baking powder
Preheat oven to 350º. Grease and flour a 9-inch cake pan.
Place almond paste and sugar in a food processor and pulse to
combine.
Cream butter with the almond sugar mixture and add the eggs one
at a time. Add the vanilla.
Combine the flour, salt and baking powder. Add to the batter.
Mix just to combine.
Pour into a prepared pan and smooth batter evenly. Bake for 45-60
minutes, until a toothpick inserted in the center comes out clean.
Cool on rack for 10 minutes and remove cake from pan. Continue
to let cool before serving.
Sprinkle powdered sugar and top with berries. Add whipped cream or ice cream and top with fruit topping.
SLice strawberries and mix with blueberries and add 1/4 cup sugar in bowl and refrigirate till ready to serve.
